Kothamalli Sadham Recipe| Coriander rice Recipe

This is a very good recipe for lunch box and also very easy to make even during busy weekdays. You can also use leftover rice to make this recipe. Both Basmathi rice and normal rice works well.


Ingredients:


Cooked Rice - 1cup

Coriander leaves - 1 bunch

onion - 1 small (optional)

Ginger - 1-inch piece

Green chilies - 4

Cashews - few

Peanuts - 2 tbsp

Salt - as needed

oil- 2 tbsp

mustard seeds - 1 tsp

Urad dal - 1 tsp

Chana dal - 1 tsp

Curry leaves -few


Steps:

  1. In a mixture, grind coriander leaves, ginger, green chilies to a smooth paste

  2. Add oil to a pan. Once it is hot, add mustard, urad dal, and chana dal. Once the mustard seeds splutter and the urad dal and chana dal starts browning, add the curry leaves, onions and saute it till it turns translucent.

  3. Add peanuts and cashews now and saute it for a minute. Add salt and the ground mixture and cook until the water evaporates and everything comes together.

  4. Now reduce the flame and add the cooked rice and mix it well.

Serve it with Pappad (Appalam) or any vegetables of your choice.
