Mutton Chukka/ Mutton Varuval /Mutton Fry

Mutton chukka or mutton varuval or mutton fry is a spicy dry sidedish item that goes very well with rasam rice or curd rice. It is also very good with briyani. The spice flavor for the dish comes from the pepper. Cooking in cast iron enhances the taste of the recipe.
Ingredients:
To Pressure Cook:
Mutton/lamb - 500g / 1lb
Turmeric - 1/4 tsp
Red chili powder -1 tsp
Salt - 1/2 tsp
Water -1/2 cup
To Temper:
Cinnamon - 1 inch
Cloves - 3
Green chilies - 4 Cut slit wise
Curry leaves - few
Other:
Onion - Shallots 10 (finely chopped) or 1 big
ginger garlic paste - 1 tbsp
pepper powder - 2 tsp
coriander powder- 1 tsp
cumin powder- 1tsp
oil-2 tbsp
salt- as per taste
Steps:
Add the mutton, turmeric, red chili powder, salt, and water to a pressure cooker and cook for 3 whistles.
Add oil to a pan and add items given under temper. Now add the onion and saute it till it becomes translucent
Add the ginger-garlic paste and saute it till the raw smell goes away. Now add the pepper, coriander, cumin powder and saute it for a minute. Take care not to burn the spices
Now add the cooked mutton along with the water and mix well. Let it cook until the water evaporates and everything blends together. Adjust the salt as per your taste.
Serve it hot with any rice varieties or chapati/roti.
