Ridge Gourd Curry Recipe | Peerkangai Kuzhambu Recipe | Ridge Gourd Sabzi

RidgeGourd Curry/Sabzi is a side dish for chapati, roti, and plain rice. Ridge gourd is very rich in fiber and has low calories and good for weight loss.
Ingredients:
Ridge Gourd - 2 big nos
onion -1 small
Tomatoes -2 small
Green chilies - 2
Turmeric powder -1/2 tsp
Red chili powder - 1tsp
coriander powder- 1 tsp
Garam masala - 1/2 tsp
oil - 2 tbsp
Mustard -1 tsp
Urad dal -1 tsp
Cumin- 1tsp
Curry leaves - few
Salt - as needed
Water - 1 1/2 cups
Steps:
Remove the skin of the ridge gourd and cut them into small pieces. In a pan add oil. Once it is hot, add mustard, urad dal, cumin, and curry leaves.
2. Once the mustard starts to splutter, add green chilies and onion and saute till the onions are translucent. Add tomatoes and cook until it is mushy.
3. Now add the turmeric, cumin, coriander, red chili, and garam masala powder and mix well. Add a little water and saute it for a minute.
4. Add the chopped ridge gourd and mix it with the masalas. Now add water, salt. Cover and cook for 10 minutes. Garnish with coriander leaves.
Enjoy it with hot rice, chapati/roti!
