Tomato rice/ Thakkali sadham.

Tomato rice is one of my favorites. I like to have this in my lunch box all the time. It is a simple and very tasty one-pot recipe. You can eat it with onion raitha. Here, I have used basmati rice but normal rice will also taste good. Let us look into the recipe.

Ingredients:
Basmati rice - 1 1/2 cups
Tomato - 3 large (6 small)
Onion - 1 large
ginger-garlic paste - 1 tsp
green chilies - 5
Red chili powder -11/2 tsp
Curry leaves -few
Coriander leaves - few
Oil - 2 tbsp
Ghee - 1 tsp
mustard - 1 tsp
urad dal - 1/2 tsp
fennel -1/4 tsp
Steps:
Grind the tomatoes to a smooth paste and keep it aside
In a pressure cooker, add oil and ghee. Once the oil is hot, add mustard, urad dal, fennel seeds. After they splutter, add in the curry leaves and green chilies.
Now add in the onion and saute it till they turn light brown. Add ginger-garlic paste and saute it till the raw smell goes away.
Add in red chili powder, salt and mix it well. Now it is time to add in the ground tomatoes. Measure the puree in a cup and pour it in the cooker. Add coriander leaves and adjust the salt now.
For 1 1/2 cup basmati rice, 3 cups of water are needed. As we added tomatoes water should be reduced accordingly. my ground tomatoes are for 2 cups, so I added 1 cup of water. Once it starts boiling, add in the rice.
Close the pressure cooker with lid and put on the weight. Cook for two whistles.
Serve it hot with raitha. Potatoes, cauliflower also goes well with this rice.
