Tomato thokku is a delicious side dish for chapati, idli, dosa, and rice. It can be stored in the refrigerator for a month. Whenever you go on a road trip or a picnic you can make this in advance and take it with you. You can spread this on the chapati and pack it as finger food. It is a spicy and tangy flavored recipe that tastes so good with curd rice. Let's see how to make it step by step.
Ingredients:
Ripened tomatoes - 8 to 10
Tamarind - gooseberry sized
Salt- 2 to 3 tsp
Sesame oil - 5tbsp
Mustard seeds - 3 tsp
Fenugreek seeds - 1tsp
Cumin seeds - 2 tsp
Hing - 1tsp
Red chilies - 10
Red chili powder - 1 tsp
Steps:
1. Wash tomatoes and cut them into small pieces.
2. Add tomatoes, tamarind, salt, 8 red chilies to a blender and grind to a smooth paste without adding any water.
3. In a pan, add the ground paste and let it come to boil. Once it starts boiling cover it with lid and stir for every 4 to 5 minutes until the water evaporates and the mixture comes together.
4. Meanwhile dry roast 2 tsp of mustard, cumin, and 1 tsp of fenugreek until the cumin and fenugreek are roasted well. Cooldown and grind this to a smooth powder
5. Now in another pan add oil. Once it is hot, add a tsp of mustard, 2 red chilies, and hing. Once the mustard splutters, switch off the flame. Now add red chili powder to the oil and add this to the cooked tomato paste and mix well.
6. Now add the powdered spices and mix everything well. Cook for 5 minutes.
7. Store this in an airtight container and refrigerate.
Serve it with idli, dosa, chapati or rice. Enjoy!
