Boiled Peanut Salad/Chaat Recipe

Peanuts are one of my favorites. I love to eat them raw, boiled, roasted, or in the form of peanut butter. When I grew up, on my grandparent's farm they used to plant peanuts a lot. Going to the field, picking the peanut plant, and eating the fresh peanuts with the fresh soil smell is priceless. I miss those days. I can't get fresh peanuts every time here in the USA. So, I am using the dried peanuts that you can get in stores. It is very easy to make. Let's look into the recipe.
Ingredients:
Dried peanuts - 1 cup
Cucumber - 1
Raw mango- 1/2
Onion - 1/2 finely chopped
Tomato - 1 small finely chopped
Cilantro -few twigs
Lemon juice - 1 tsp
Salt - as per taste
Chaat masala - 1 tsp
Turmeric -1/4 tsp
Steps:
Soak the dried peanuts in water for 3 hours. Wash the peanuts and add water, a little salt, and turmeric. Pressure cook the peanuts for 3 whistles.
Remove the peanuts from the cooker and drain the water.
In a bowl add the peanuts, cucumber, raw mango, onion, tomato, cilantro, lemon juice, a little salt, chaat masala, and mix it well. Now, It is ready to be served.
Enjoy the boiled peanut salad !!
