Saturday is when we have our lunch leisurely. That is the reason why Saturday’s lunch menu is always special in our home. My husband is a huge fan of vegetables so there will be at least two vegetables in our lunch menu. In today’s lunch menu it’s rice with channa curry, rasam, flat valor stir fry and brinjal stir fry. Soaked channa overnight for channa curry.
Channa Curry Recipe

Ingredients
Channa – 1 cup
Onion – 1 medium
Tomato – 2 small
Brinjal -2 or 3
Red chilli powder – 2 tbsp
Coriander powder – 2 tbsp
Turmeric powder – 1/4 tsp
Tamarind – small gooseberry size
Coconut – 1 tbsp
Mustard – 1 tsp
Urad dal – 1/2 tsp
Curry leaves – few
Fenugreek – 1/4 tsp
Hing – a pinch
Steps:
1. Add a tbsp of oil and add onion. Saute it till the onions turn translucent. Now add in the chopped tomatoes and saute it for 1 minute
2. Now add the all the spice powder and stir for a minute. Add the coconut now and switch off the flame.
3. Cool down and grind the mixture to a fine paste by adding some water
4. Add a tbsp of oil and temper with mustard, urad dal, fenugreek,curry leaves.hing. Add brinjal and saute it for a minute
5. Add the masala paste and mix it well. Now add the tamarind extract and let it boil for two minutes. Now add the boiled channa and adjust the salt as per taste. Let it boil for 5 minutes.
6. Garnish with coriander leaves
