This chutney when made spicy tastes delicious. I will eat one idli/dosa extra for sure with this chutney. Its an very easy recipe to make. There are different versions with and without onions. I prefer one with onions as it controls the garlic flavor.Garlic has a lot of medicinal value too. My friends and family likes this chutney a lot.Now lets look into this recipe

Ingredients

Garlic - 20 cloves

Dry red chilli - 8 nos

Onion - 1 small ( pearl onion preferred - 5 nos)

Tamarind - a small piece

Salt - 1/2 tsp

Sesame oil - 1 tbsp

To Temper

Sesame oil- 1 tbsp

Mustard - 1 tsp

Urad dal - 1/2 tsp

Hing/asafoetida - a pinch

Curry leaves -few

Instructions

1. Add a tbsp of sesame oil and add in the garlic. Saute it for 2 minutes.

2. Add in the onions and saute it for a minute. Now add the red chillies and stir it and switch off the flame

3. Add salt and tamarind . Transfer the mixture and allow it to cool down.Grind it to a fine paste by adding some water

4. Add some oil in the same pan and temper with the ingredients given under temper. Now add in the ground paste and mix well

Spicy Garlic chutney is ready! Serve it with hot idli or dosa.

Notes

1. If you want the chutney to be spicy add 1 or 2 red chilli

2. Sesame oil enhances the taste of the chutney. It is fine to use other oil but I prefer to use sesame oil

3. If you want the color of this chutney to be bright add in some kashmiri red chilli instead of regular chilli
